Cherry Tomato Compote

Ingredients:
2 c. Cherry Tomatoes halved or quartered, depending on their size
2 teaspoons salt
2 T. Honey
1 T. Hot Chile like a Jalapeno finely minced

1. Sprinkle tomatoes with salt, toss and place in colander. This step renders some of the clear tomato liquid so the compote won’t become too watery. Let sit for 10 minutes.

2. Place drained cherry toms in bowl and add other ingredients. Gently toss everything so honey coats all. I will be serving this today with the Creamery’s fresh goat cheese and bread, that’s one combination. It might be good tossed with some salad greens. ALSO 2 T. of some finely chopped herb (Choose something complimentary to tomatoes, basil maybe parsley. For the Farmer’s Market I used Spanish tarragon.)
