Type of Meal: Side-Dish
1 cup cider or white vinegar
½ cup sugar
4 cups cucumber sliced as thin as possible
1 cup sweet onion sliced very thin
2 teaspoons salt
1 teaspoon pepper
¼ cup chopped fresh dill or French tarragon. Choose one or the other but not both.
1. Combine vinegar and sugar and slowly stir for 1 minute to dissolve.
2. Add all ingredients and toss to combine.
3. Cover and chill for at least 30 minutes.
